The guy who made this into a craze, Paul Prudhomme does red fish with
something like this (though I've changed it to suit my tastes):
1 Tbsp sweet paprika
1 tsp salt (more or less to taste)
1 tsp onion powder
1 - 1 1/2 tsp cayenne (though there are HOTTER chile powders if
you prefer)
3/4 tsp each white and black pepper. I'll cheat and use all black.
1/2 tsp each dried oregano and thyme leaves
